Chiles en nogada vegetarianos: receta de una abuelita

Eli, una abuelita de la Colectiva Oleaje, nos habló de la importancia de las abuelas en México. Además nos compartió la receta de unos deliciosos chiles en nogada vegetarianos.

Elizabeth tiene cuatro hijas y una nieta; durante la entrevista nos comentó que toda la vida ha cocinado (más de cuarenta años), y que ninguna de sus hijas le agarró amor a la cocina; sólo su nieta.

Sin embargo, su nieta es una millennial que trabaja jornadas eternas, vive para pagar la renta y ver qué come rapidito; por eso no puede dedicarse a la cocina como ella y su abuela quisieran.

Ante esta realidad, Eli se ha preguntado constantemente qué sucederá con las futuras generaciones que deseen comer algo típico mexicano, pero no cuenten con abuelitas que sepan hacerlo. Tiene miedo de que la cultura gastronómica de México, la que es hogareña y sucede en pequeñas cocinas en todos los barrios de nuestro país, se pierda.

Eli comentó que, por supuesto, siempre habrá restaurante a dónde acudir para comer algo sabroso y típico; pero que lo hecho en casa siempre será mejor, ya que no necesitará restarle costos a la calidad, para conseguir alguna ganancia. Al final, no importa qué tan fino sea el restaurante, sigue siendo un negocio que debe cuidar sus ingresos.

Por todas estas razones, Eli decidió compartirnos una forma rápida y sencilla de hacer chiles en nogada vegetarianos; que también son más baratos porque no llevan carne.

La idea es que cualquier millennial pueda preparar sus chiles en nogada vegetarianos de ahora en adelante. Quizá con esto, hasta inviten a sus abuelas y las consientan con este rico platillo.

Chiles en nogada vegetarianos

Chiles en nogada vegetarianos

Ingredientes:

  • 6 chiles poblanos
  • 6 hongos portobellos grandes
  • 50g de nuez (no de castilla, de la que quieras)
  • 1/2 taza de almendras fileteadas
  • 2 duraznos
  • 3 peras medianas
  • 2 manzanas
  • 1/2 cebolla
  • 6 dientes de ajo
  • 100g de acitrón picado
  • Azúcar, sal y pimienta
  • Aceite

Para la nogada:

  • 200g de nuez
  • 1/2 litro de crema ácida
  • 190g de queso crema
  • Un caballito de tequila blanco
  • 1/2 taza de leche (de tu preferencia)
  • 50g de acitrón picado
